Starting a Family is Tough

Since I laid eyes on my wife I knew that we would have a beautiful family.

My wife and I have been trying to start our own family for about 2 1/2 years now with no success. We set out to get answers from God and our doctors. First I was tested because it was the simplest and least expensive. All went well for those tests, pfeww we were revealed. Then my urologist recommended that we shoot for IUI
(Intrauterine Insemination). Ok so we set up an appointment with an OBGYN to talk about it, well here come more tests and more money. Oh by the way we are covered but only 50%. We go through all of the tests one of them was pretty hard on my wife its the HSG testing ($683). Ya know its hard to watch your wife go through something that is totally out of your control to make better or to “fix”.  We sit back down with the OBGYN to talk about the results. Dr. Murray went through all of our blood work and then we get to the x-ray from the HSG I remember it very well I will never forget what she said because my heart dropped, ” You see this here that is the uterus its lit up and that’s good, now there is a fibroid there that could be causing infertility but that’s easily treated, what I am concerned about is this area here (she points to the tubes) here we can’t see your tubes lit up, your tubes are blocked. One is blocked about half way and the other is blocked, this is treatable but its expensive.” Everything else from there was a blur. We received notice that the treatment for investigating the tubes is $7-$8,000 we are asking for $15,000 to cover any additional costs. We aren’t sure if this price includes the opening of the tubes or not. This whole process has been extremely hard on us but I know with our faith in God and our families support we will get through this. It’s not like us to ask for money because we have always made it on our own but this is a huge chunk of money that we don’t have.

And in one holy, catholic and apostolic church. We confess one baptism for the remission of sins. We look for the resurrection of the dead, and the life of the coming age. Amen.

Apple Pie Tacos

I love Apple Pie and nothing says spring like Apple Pie Tacos am I right?

This recipe is mostly healthy and cheating at the same time.

We are taking Apple Pie and putting into a taco. Now I made the filling and Greek yogurt mix before I even started dinner so that it can cool off. Cook the apples as long as you want it’s totally up to you!

Apple Pie Tacos (yields 6)

Filling

2 Granny Smith Apples cubed (I kept the skin on but it’s up to you if you like them peeled)

1/2 c Organic Brown Sugar

1c Water

1 tsp Ground Nutmeg

1 1/2 tsp Ground Cinnamon

2 TBS Butter

Greek Yogurt Topping

1 c Organic Vanilla Greek Yogurt

1 TBS Organic Honey

1 TBS Ground Cinnamon

Taco Shells

6 Gordita Sized Organic Flour Tortillas (smaller than regular flour tortillas)

1/2 c Organic Sugar

2 TBS Ground Cinnamon

Oil for frying

In a medium sauce pan add brown sugar, water, nutmeg, cinnamon and bring to a slight boil. Add in cubed apples and butter, simmer on low for 15 min, again you can do it as long or as little as you want. Pull off burner and pour into a bowl, set aside.

In a small bowl add the Greek yogurt, honey and cinnamon mix well and put in the fridge.

 

In a gallon zip lock bad add the sugar and cinnamon for the shells, shake.

In a medium pan on medium high heat (you can deep fry these or just pan fry, I pan fried mine) using tongs fry tortillas, I fried mine flat on one side for about a min then folded and fried each side, if you deep fry these use the tongs to pinch together the taco shell and fry.

Once fried to a golden brown remove and dab oil on paper towel, toss in the cinnamon sugar mix and then set aside, repeat for all six shells.

Fill each shell first with Apple Pie filling, about 1/4c or a couple scoops, and then top with Greek yogurt and enjoy your refreshing desert!

The Art of Cooking

Oh how I love cooking!

I fell in love with cook because of my Grandma Judy. We would have huge holidays at her house and she was always in the kitchen cooking so I stayed and helped.

I remember helping make her Christmas candy, stirring fudge and divinity is no joke people.

I have worked for everything from a small Italian restaurant to special events for The Walt Disney Company. I have loved every minute of my journey. I no longer work in the culinary field however I still love to cook. I have a couple recipes that are dear to my heart that I will teach someone how to cook but I wont give out the recipes.

I also make wedding cakes and all cakes really, I am pretty good at it.

So today I am going to share a recipe for you all, I made this for a church event last summer and it was a hit.

 

Before you begin you need to prep your fish.

Rinse, pat dry, lay on a rack over cookie sheet, salt and set in the fridge for 30 min, take it out let it get to room temp then your good to go.

Honey Butter Lemon Mahi Mahi (don’t be afraid to cook fish its simple really)

2-3oz Mahi Mahi Filets (room temp) Seasoned to taste

2 TBS Butter

2 TBS Honey

2 TBS Lemon

1 TBS Finely Chopped Garlic

 

In a medium skillet heat 2 TBS Olive oil on medium heat.

Season Mahi and place in hot skillet. Pan sear Mahi for 3-4 min on each side.

Place Mahi on cookie sheet in oven preheated to 150°.

Turn heat to medium high. Put Butter in pan and whisk to get all renderings off bottom of the pan.

Add the Honey, Lemon and Garlic to butter and whisk until sauce is formed (should be thick enough to coat back of a spoon) if not let simmer for 10 min on low.

Take Mahi out of the oven and plate. Pour sauce over Mahi Mahi and garnish with lemon. Serve
